Welcome to Gluten Free Colorado Springs

So I was on the treadmill today at the gym, and after I dropped my little ones off at daycare and had a moment to think, I realized that one of my greatest life changes has been going Gluten free for about a year now, and wondered how many people felt the same way. I have learned to make gravy at Thanksgiving without flour, amazing pancakes and breads, and found my favorite everyday foods that even my family can't tell are gluten free. I have lived here in Colorado Springs for 5 years now and love the earthiness of the Colorado folks. We appreciate clean mountain air and often ponder why there is no interstate that goes east to west in Colorado Springs.

I have gone gluten free and have much better immunity, energy and digestion. I discovered my gluten intolerance by going on a cleanse called Clearvite. I never directly reacted to Gluten, but once I cut it out and helped my liver and colon detox from daily environmental stresses, I added it back at the end of the cleanse and had a headache for three days. A little abdominal cramping, but the headache was awful.

I am not a chef.. just a mom of three kids that tries to sneak in veggies wherever I can. I would love to learn more from the GF community about cooking up some killer GF meals.
